SAP B1 ↔ Toast POS — Restaurant Sales, Labour + Inventory

Toast is the leading restaurant POS in North America — 100,000+ restaurants run on it — and the SAP Business One side of the flow is where multi-outlet restaurant groups typically get stuck. Each outlet's daily sales need to post to SAP B1 with revenue split by service channel (dine-in commands different tax + labour than delivery). Aggregator revenue (DoorDash, Uber Eats, Grubhub) settles days after the order and needs reconciliation against original tickets. Labour cost from Toast Payroll needs to hit the GL. Food-cost inventory needs to deplete per menu-item recipe. Multi-outlet chains map each Toast location to a distinct SAP B1 branch, cost centre, or subsidiary.

Payments are split by method (cash, card, gift card, aggregator payout owed) with card payments posting to a Card Clearing account that clears when the processor settlement arrives.

Aggregator settlement reconciliation is where a restaurant's margin math actually happens. DoorDash typically settles T+7 with a 20-30% commission taken off gross, Uber Eats settles T+3 with 15-30% commission, Grubhub settles weekly with 15-30%. The ERPPlugs connector reads each aggregator's settlement API, matches settlement lines to original Toast orders, splits commission to distinct aggregator-commission GL accounts (so contribution margin per aggregator is readable), and posts the net cash to the bank clearing. Labour cost flows from Toast Payroll into SAP B1 as a daily accrued-labour Journal Entry — actual hours × pay rate + tips + payroll taxes, split by cost centre (Kitchen / Front-of-House / Management). Food-cost inventory depletes per Toast's recipe library — a burger sold at $18 deducts 6oz beef + 1 bun + condiments + fries in ounce quantities from your SAP B1 inventory. For multi-outlet groups this means real-time inventory + waste tracking across every location.
